Portobello Caprese Sandwiches

Ingredients
2 large Portobello mushroom caps, stalks discarded
2 teaspoons coconut oil, melted
1 tablespoon balsamic vinegar
sea salt, garlic powder, and black pepper, to taste
2 teaspoons Italian seasoning
4 slices gluten-free bread
¼ cup organic pesto -or- vegan pesto
4 slices soft buffalo mozzarella cheese -or- vegan cheese
1 large tomato, sliced
2 cups pea protein chips
Directions
Heat oven to broil on high.
Line a small sheet pan with foil.
Add Portobello mushrooms (gill-sides up) to the pan.
Drizzle them with melted oil, vinegar, and dry seasonings.
Broil for 10 minutes.
Use tongs to tip out and discard any excess liquid, then set aside.
Place bread slices on a cutting board.
Slather tops with pesto, then layer the broiled mushrooms, cheese, and tomato.
Sandwich the slices together to create two sandwiches.
Slice each in half, and enjoy with chips.
