NotMeat-Ball Subs

Ingredients

  • 4 gluten-free hoagie rolls, lightly toasted
  • 12 soy-free frozen falafel balls (heated to package directions)
  • 1 cup organic marinara sauce, heated
  • 8 slices organic provolone cheese-or-vegan cheese
  • ½ cup Bleu Yogurt Dressing (recipe in Dressings)

Directions

  1. Split the toasted hoagie rolls and divide them between 4 serving plates.
  2. Fill each with 3 cooked falafel balls.
  3. Pour heated marinara over the tops of the falafel balls, then add 2 slices of cheese to each sandwich.
  4. Close sandwiches and slice in half.
  5. Enjoy with Large Salad tossed with dressing on the side.

Omnivore option: Substitute 1 lb. frozen, cooked organic gluten-free meatballs in place of the falafel balls.
