Ingredients
2 cups (40 g) arugula or rocket
5 oz (140 g) baked chicken breast, sliced (pre-marinated with avocado oil and coconut aminos)
1/4 cup (31 g) raspberries
1 oz (28 g) goat cheese, crumbled
1/4 avocado
1 tbsp (14 g) olive oil
Juice of 1/2 lemon
Salt and pepper to taste
Directions
Top salad greens with sliced baked chicken breast, raspberries, goat cheese, and avocado.
Mix olive oil, lemon juice, salt, and pepper together and toss with salad.
