Ingredients
2 cups (226 g) shredded raw carrots
1/2 tbsp (7 g) olive oil
1/2 tbsp (10 g) maple syrup
1 tbsp (15 g) apple cider vinegar
1 tbsp (19 g) lime juice
1 tbsp (17 g) Dijon mustard
Salt and pepper to taste
5 oz (140 g) grilled chicken breast (measured raw)
1 cup (38 g) grapes
Directions
In a bowl, combine shredded carrots, olive oil, maple syrup, apple cider vinegar, lime juice, Dijon mustard, salt and pepper. Stir until combined.
Top with grilled chicken breast.
Serve with a side of grapes and enjoy!
