Chinese Chicken Salad

Ingredients

Salad:

  • 1 cup (90 g) green cabbage, sliced thin
  • 1/2 cup (56 g) shredded carrots
  • 1 green onion, chopped
  • 1 tbsp (15 g) slivered almonds
  • 1 tbsp (1 g) fresh cilantro, chopped
  • 8 mandarin orange slices, canned in water
  • 1 cooked chicken breast, chopped

Dressing:

  • 1/2 tbsp (8 g) almond butter
  • 1 tbsp (15 g) coconut aminos
  • 1/2 tsp (4 g) apple cider vinegar
  • Dash of onion powder
  • Dash of garlic powder
  • Dash of black pepper
  • 1 apple

Directions

  1. In a large salad bowl, add all salad ingredients.
  2. In a separate bowl, mix together all dressing ingredients until well blended. Top salad with salad dressing and enjoy!
